Vegetarian Thai Red Curry Recipe (Video)

I am excited to share with you one of my favorite Thai recipes, Thai Red Curry. This recipe was one of the most popular dishes I prepared at my restaurant and is also a favorite among my family. Traditionally it is made with meat but I have changed the recipe slightly to make it vegan and vegetarian. In this recipe, I use seitan (a vegetarian meat substitute ) instead of chicken, as it is very delicious and perhaps is the best tasting meat substitute.
