I feel so blessed to have miso soup be apart of my daily life. Usually I like to have my vegetable miso soup for breakfast. It is a great way to start off your day with a superfood that is both light and easily digested. The health benefits miso soup are enormous. It keeps my blood sugar levels balanced and also helps create and maintain an alkaline condition in the body, which is key to disease resistance and prevention. Miso soup will also enrich the intestinal flora of healthy bacteria and hence support immunity. I could just go on and on about the benefits of miso. Thus, it is a good idea to try miso soup for yourself and have your own experience with it to see how it makes your body feel over time. I would recommend it on a regular basis, just once per day.
What is a miso paste? Usually Miso is a fermented soy beans paste , salt and koji. Other varieties include rice, barley, and wheat. Always buy unpastuarized organic Miso, a live food. I only use Ohsawa’s or Eden’s brand for my miso paste. If you have wheat or gluten allergies be sure to get the miso paste without wheat. Also, note that this recipe is completely vegan/vegetarian.
Miso Soup Ingredients:
- 1 Tbsp. Wakame ( Get a small bowl and Use 2 tbsp. of water to soak the wakame)
- 1/2 C. Shitake Mushroom
- 1 1/2 Tbsp. Brown Rice Miso Paste ( Get a little bowl and add miso paste and 2 tlbs of water mix it)* Gluten Free
- 1/2 C green scallions chopped
- 1/4 bunch of Mustard Greens or any greens(cut in small pieces)
- 4 C water
Miso Soup Instructions (see my video below):
- Pre-soak the wakame strip in a bowl for few minutes.
- Bring 4 cups of water to boil. Once it has boiled turn the flame to simmer.
- Drain your Wakame, then add the Wakame, Shitake Mushroom, and onions… let them cook for for 3 minutes.
- Add miso paste, cook for 1minute.
- Add greens and scallions, cook for minute or so.
- Now it is time to enjoy your delicious healty Miso soup!
Feel free to mix up the ingredients with some of your favorite vegetables and to modify the amount of miso paste to your liking. Sometimes I like to add squash and or a little a rice that I have previously cooked. I hope you enjoyed this recipe and would love to hear about your miso soup making.
