I am excited to share with you one of my favorite Thai recipes, Thai Red Curry. This recipe was one of the most popular dishes I prepared at my restaurant and is also a favorite among my family. Traditionally it is made with meat but I have changed the recipe slightly to make it vegan and vegetarian. In this recipe, I use seitan (a vegetarian meat substitute ) instead of chicken, as it is very delicious and perhaps is the best tasting meat substitute. Seitan can usually be found at your local health food store or WholeFoods. This recipe only takes about 15 minutes to make. It sounds complicated, but it is very simple to make.
Ingredients:
- 1 Red bell pepper, chopped
- 1 Green bell pepper, chopped
- 1/2 Onion , diced
- 2 carrots, chopped
- 1/2 head of Cauliflower, chopped
- 1 cup of Broccoli, chopped
- 8 ounces seitan, chopped (Optional)
- 3 Tablespoons red curry paste (World Foods* brand)
- 2 cans of Organic Coconut Milk
- crushed peanuts (optional)
- salt to taste
*The Thai Red Curry paste I use is suitable for vegetarians, vegans, and Celiacs.

Preparation
Note: This recipe does not use fish sauce, sugar, meat, dairy, or any unhealthy ingredients.
Pour 1 can of a high quality coconut milk in a pan. Turn the stove to medium-high heat. Add the red curry paste and stir until the paste is mixed in with the coconut milk. Add the second can of coconut milk to the pan. Stir every 2 or 3 minute until the sauce thickens to the consistency you like.
While waiting for the sauce to thicken up, you can start preparing your vegetables if you have not already. Once the sauce is thick enough, add in the vegetables starting with the ones that take the longest to cook like cauliflower and seitan. Let them cook for about 5 minutes. Then add broccoli, red bell peppers, green bell peppers, carrots, and onions. Stir off and on for another five minutes or until the vegetable are to your liking. Add salt to your taste.
To enhance the flavor you can sprinkle a bit of crushed peanuts on the final dish or add some to the sauce.

Thank you SO MUCH for this recipe and the video! This is now my go-to comfort food when I am craving Thai. I lived in Thailand for a while and this is the closest I have come to authentic Thai taste at home!!! I can’t believe how easy it was to make too.
